Borage[edit]

Borage (Borago officinalis), also known as starflower, is an annual herb native to the Mediterranean region. It is known for its bright blue, star-shaped flowers and its cucumber-like flavor.

Growing[edit]

Borage is easily grown from seeds, which can be sown directly in the garden after the last frost date. Seeds should be planted 1/4 inch deep and 12 inches apart. Borage is a hardy plant that can tolerate poor soil and drought conditions. It prefers full sun but can also grow in partial shade.

Plant Size[edit]

Borage plants can grow up to 2-3 feet tall and 1-2 feet wide.

Harvesting[edit]

Borage leaves, flowers, and stems can be harvested throughout the growing season. Young leaves have the best flavor and can be used fresh or dried. Flowers can be harvested as they appear and used fresh. Seeds can be collected when the seed pods turn brown and dry.

There are no commonly recognized varieties of borage.

Uses[edit]

Borage leaves and flowers can be used in salads, sandwiches, and cocktails. The flowers are often used as a garnish or to decorate cakes. Borage is also known for its medicinal properties and is used in herbal teas and tinctures.
